چکیده

Bioactive peptides are specific protein fragments that positively impact body’s function or condition and ultimately may influence health. These peptides are inactive within the sequence of the parent protein and can be released during proteolysis or fermentation. These peptides may exert a number of different activities in vivo, affecting cardiovascular, endocrine, immune and nervous system in addition to nutrient utilization. Eggs have traditionally been recognized as an excellent source of protein, vitamins and minerals. Research in the past decade, however, has produced a substantial amount of evidence indicating that egg peptides may exert several diverse biological effects, above and beyond fulfilling basic nutritional requirements. Several biological activities have now been associated with egg proteins, including novel antimicrobial activities, immunomodulatory, anti-cancer, and antihypertensive activities, highlighting the importance of egg proteins in human health, and disease prevention and treatment. Continued research to identify new and existing biological functions of hen egg proteins will help to define new methods to further improve the value of eggs, as a source of numerous biologically active compounds with specific benefits for human and animal health, and secure their role in the therapy and prevention of chronic and infectious disease.

Advances in the value of eggs and egg components for human health.

The avian egg is an important source of nutrients, containing all of the proteins, lipids, vitamins, minerals, and growth factors required by the developing embryo, as well as a number of defense factors to protect against bacterial and viral infection. Moreover, eggs are now understood to contain substances with biological functions beyond basic nutrition, and extensive research has been under...

Physical-chemical and antimicrobial properties of Egg White Protein Powder

Chicken egg white is a perfect source of proteins, lipids, minerals and vitamins. Proteins in eggs are distributed among the egg white (EW) and the yolk. EW consists of water (88%), protein (11%) and trace amounts (1%) of carbohydrates, lipids and ash (Kovacs-Nolan et al., 2005). These proteins are recognized by their functional properties such as nutrition (Abeyrathne et al., 2013; Ko & Ahn, 2...

Avian antimicrobial peptides in hen reproductive tract and egg

Recently, many avian antimicrobial peptides have been predicted by bioinformatics and identified by proteomics. These compounds are generally small cationic molecules that possess activities against protozoans, fungi and viruses, as well as gram-positive and gram-negative bacteria. They are components of innate immunity and are capable of evading pathogen resistance mechanisms. Hens export prot...

Purification of Large Quantities of Biologically Active Recombinant Human Growth Hormone

Production and purification of human growth hormone using a simple method was studied in two recombinantEscherichia coli, D7-5 and C27-2 strains. The r-hGH was expressed in the form of inclusion body in a batchfermentation process and purified to 99% purity using a procedure based on acid precipitation of the hostderived proteins and other impurities. The effect of the pH and ...

Antimicrobial Peptides Derived from Milk: A Review

Milk proteins provide a natural source of bioactive peptides with potential health benefits and applications in the food industry. The release of these peptides from milk proteins is achieved either by hydrolysis using digestive proteases or by lactic acid bacteria fermentation. Peptides, particularly those derived from milk proteins, can exert a wide range of nutritional, functional and biolog...
